My First Year of Being Gluten Free
No CommentsIt was just about this time last year when I first discovered I was sensitive to gluten. I had been having all sorts of digestive issues and side pains and the doctor had no clue what was causing them. I did some research and decided to try a gluten free diet for a week. All of my issues went away after only a few days, and I knew I needed to avoid gluten to keep those things away. I decided to avoid gluten for a while and then go back to eating it to make sure it was the problem, and every time the issues came back, so I was gluten-free from there on out.
While I was excited I knew what had been causing my digestive issues and side pains, I was a little bit shocked I would have to give up gluten. After all, most of my favorite foods contained gluten: pizza, pasta, sandwiches, cereals, and pancakes. I thought I would be stuck eating boring foods like salads all the time. Over the past year, I have been finding more and more gluten-free foods that I love. There are also tons of pizzas, pastas, and breads that are made gluten-free and available for purchase in the store. I can safely say I have been able to find every food item that I love in a gluten-free form.
I have also noticed that more and more restaurants are gravitating toward a gluten-friendly environment. Many top food chains have their own gluten-free menu. I have found chefs at restaurants to be very accommodating toward me if I request something be cooked specially without gluten. I really believe that nearly all restaurants in ten years or so will have gluten-free menus. I feel like the number of people eating gluten-free is just going to continue going up, and the food industry is taking notice.
