    If you want to cook great Asian meals at home, than the best investment you can make is getting yourself a wok.  Sure you can cook most meals in your skillet, but it is harder and a lot of the time the stir-fry’s just don’t come out like they should.  Choosing a good wok will help you prepare your favorite meals.

    Should You Go Traditional or Electric?
    A lot of purists out there will tell you that a traditional carbon steel wok is the only way to go.  But in reality you can make the same great dishes with an electric wok.  Today’s electric woks produce the high heat necessary for making a great stir-fry and the temperature controls allow you to cook a full range of Asian dishes.  Your choice is going to depend on whether you have a gas range or electric and if you prefer a round or flat bottom wok.  If you go the traditional route you need to learn how to properly season a wok.  It is a fairly easy, but it is an extra step.

    Choosing A Round Bottom Wok or Flat
    Traditional woks have a round bottom.  The cooking techniques, especially for stir-fry dishes are best executed in a round bottom wok.  The flat bottom wok came about to work with gas ranges without the use of a burner ring and for use on an electric range.  The best electric wok will have a round bottom.  If you have the choice the way to go is definitely the traditional round bottom.  However if you fall into one of the previous groups then a flat bottom maybe the only solution available to you.

    Choosing Non-Stick or Carbon Steel

    Both non-stick and steel surfaces have their advantages and disadvantages.  Non-stick makes for easy cleanup and healthier cooking because you use less oil.  However you have to be attentive that you don’t scratch the surface as you might find that it starts to peel.  Stainless steel is tough to clean up and you can’t season it, I’d give it a pass.  Carbon steel is great for cooking on, it heats easily and retains the heat.  However you do need to season it and use a bit more oil so food doesn’t stick.
